Our Family’s New (York Times) Favorite Roasted Chicken Recipe

Before I get going let me give the appropriate credit for the photo above - it is Evan Sung’s from the New York Times.


When my wife and I were married, one of our wedding gifts we received was the Ronco Showtime(r) rotisserie. Don’t chuckle - the thing really works - and it’s absolutely true - you can “just set it and forget it”. And, if you’ve been to our house for dinner over the last 15 years you may have tasted a roasted chicken - hopefully you will agree that it tasted pretty darn good - after all, who doesn’t like rotisserie chickens! The only issue that we had with it was you need to tie up the bird and you are faced with cleaning the equipment when you are done.


What if I told you, you can have nearly identically tasting results - a quick and easy way to serve a delicious, moist oven roasted chicken (albeit not quite “set it and forget it”) without having to clean an appliance (except for a cast iron skillet)?

This recipe only requires two pieces of equipment - a) your home oven and b) a cast iron pan.
